This frangipane cake is rich and moist, with a lovely almond flavour. I’ve added whipped egg whites to lighten it up, and then dusted it with powdered sugar after baking.

Directions
- Preheat the oven to 170 °C.
- Grease and flour the cake pan. ≈ 3 min
- Place the almond paste in a mixing bowl and add the eggs one at a time, mixing well after each addition.
- In a separate bowl, begin whisking the egg whites until they are soft peaks, then add the sugar and continue whisking until stiff peaks form. ≈ 4 min
- Gently incorporate them into the previous mixture. ≈ 4 min
- Mix this dough with the flour. ≈ 4 min
- Bake in the oven at 170 °C for approximately 45 minutes.
- Carefully remove the cake from its pan, and once it has cooled completely, dust it with powdered sugar. ≈ 2 min
