Small, steamed cakes with salted egg
Small, steamed Filipino cakes, soft and light, filled with salted egg or grated cheese. Serve warm with a little butter.
These light and airy Filipino steamed cakes, known as putong puti, are very soft and fluffy. The use of yeast and whipped egg whites gives them their delicate texture. A topping of salted egg or grated cheese enhances their sweetness.

Directions
- Prepare the steamer and small muffin molds.
- Dissolve the yeast in the water. ≈ 4 min
- Combine the flour, sugar, and baking powder. ≈ 4 min
- Add the dissolved yeast. ≈ 3 min
- For the batter, whip the egg whites to soft peaks. ≈ 10 min
- Add the sugar and beat until it forms a thick consistency. ≈ 4 min
- Gently incorporate the mixture into the yeast. ≈ 4 min
- Pour servir, pour each mold, add the specified ingredients and let it rest for 10 to 20 minutes.
- Top with sliced or grated salty egg. ≈ 10 min
- Bring the water to a boil for the steamer.
- As soon as the water comes to a boil, add the molds. ≈ 3 min
- Steam for 10 to 15 minutes.
- Spread with butter before serving. ≈ 4 min
