Frozen yogurt with Pryaniks
Soft, cheese-flavored biscuits made with yogurt, cream, and eggs, baked in the oven and topped with a simple white icing. A simple Russian snack.
The pryanik is a small, traditional Russian cake. This version, made with yogurt and kefir, is cut into slices, baked in the oven, and then glazed with white icing while it’s still warm.

Directions
- In a large mixing bowl, combine the oil paint, yeast, cream, kefir, sugar, yogurt, vanilla sugar, and 2 egg yolks using a spoon. ≈ 4 min
- Let it rest for 10 minutes.
- Add the flour and knead the dough. ≈ 10 min
- Let it rest for 20 minutes.
- Spread the dough to a thickness of about 1.5 cm. ≈ 4 min
- Cut out small circles. ≈ 8 min
- Prepare the oven rack. ≈ 3 min
- Arrange the dough circles, leaving space between them. ≈ 3 min
- Bake for 15 minutes at 180 °C.
- Whip 2 egg whites until stiff peaks form. ≈ 4 min
- Gradually incorporate 250g of powdered sugar. ≈ 4 min
- Brush the warm pryaniks with this glaze. ≈ 4 min
