Tuna and ricotta meatballs with lemon
Small tuna, ricotta, caper, and Parmesan meatballs, breaded and baked, to be served warm or cold with lemon.

Directions
- Preheat the oven to 180 °C.
- In a mixing bowl, beat the eggs and thoroughly combine the drained tuna with the ricotta. ≈ 4 min
- Add a pinch of salt and pepper, lemon zest, basil or parsley, Parmesan cheese, and half of the breadcrumbs. ≈ 3 min
- Grease a baking dish with a thin layer of olive oil. ≈ 3 min
- Pay close attention to the preparation, and using two spoons, form small balls that you roll in the remaining breadcrumbs. ≈ 10 min
- Bake for 25 to 30 minutes, and serve warm or cold, with lemon juice and a green salad.
