Lamb and plum soup
An Azerbaijani lamb and rice soup, filled with small plums, chickpeas, grated apple, onion, and saffron.
In this traditional dish, small lamb meatballs, seasoned with rice, each contain a few plums. They are cooked in a broth with chickpeas and Jerusalem artichokes, flavored with saffron.

Directions
- Prepare a broth using the bones.
- Place the tender part of the meat and the onion in the food processor. ≈ 3 min
- Add the rice, pepper, and salt to the ground meat. ≈ 3 min
- Mix thoroughly. ≈ 4 min
- Place 2 to 3 washed plums in the center of each ball. ≈ 3 min
- Cook the chickpeas in the broth.
- Next, add the meatballs to the broth and cook them.
- Add the chopped apples and finely diced, golden onion. ≈ 3 min
- About 10 to 15 minutes before the end of cooking, add the salt, pepper, and a saffron infusion.
- Finish cooking. ≈ 3 min
