Directions

  1. Place the potatoes in a medium-sized pot and cover with water. ≈ 3 min
  2. Add about 2 tablespoons of salt and bring to a boil.
  3. Cook for 20 minutes, remove from heat, and drain the apples.
  4. Cool them under a gentle stream of cold water.
  5. Peel them by hand when they have cooled enough to be handled, but are not yet completely cold.
  6. Chop them into small pieces and put them in a salad bowl. ≈ 8 min
  7. Add the olives, 60 ml of olive oil, and the balsamic vinegar. ≈ 3 min
  8. Season with salt and pepper, and mix gently. ≈ 4 min
  9. Don’t make it into a puree. ≈ 3 min
  10. Set this mixture aside. ≈ 3 min
  11. Bring the cream to a boil in a separate small pot.
  12. Continue to cook until only half of the cream remains, without letting it overflow or stick to the sides of the pan.
  13. Place the egg yolk in a separate mixing bowl and whisk it lightly. ≈ 4 min
  14. Remove the cream from the heat as soon as it thickens, and whisk it into the egg yolks.
  15. Reserve approximately 4 tablespoons of this mixture. ≈ 3 min
  16. In a separate bowl, combine the parsley and 30 ml of olive oil, and season with salt and pepper. ≈ 4 min
  17. Please put this basket aside. ≈ 3 min
  18. Turn on the oven’s grill function.
  19. Using a pastry ring, create 4 small circles with the apple filling in an oven-safe dish. ≈ 3 min
  20. Place a slice of goat cheese on each round. ≈ 3 min
  21. Place 1 tablespoon of the reserved cream mixture on each medallion. ≈ 3 min
  22. Place the dish under the grill and heat until the glaze is nicely browned.
  23. Carefully lift the medallions with a spatula and place them on individual plates. ≈ 3 min
  24. Add a small amount of oil paint to the parsley and serve. ≈ 2 min
