Oxtail stew with peanuts
A Filipino oxtail stew, simmered in a peanut and cilantro sauce, with pak-choi, beans, eggplant, cabbage, and banana heart.
This hearty dish involves slowly simmering oxtail pieces until the meat becomes tender. A rich sauce made with peanut butter and cilantro envelops the vegetables, which are added towards the end of the cooking process.

Directions
- Place the oxtail pieces in the boiling water, gently lowering them in to avoid splashing.
- Cover and let simmer for 7 minutes.
- Remove the meat and discard the broth.
- Thoroughly clean the tail, remove any debris, and remove any hairs from the skin. ≈ 8 min
- Rub it with a small amount of food-grade lime, then rinse it thoroughly. ≈ 2 min
- Let’s revisit garlic, onions, and tomatoes in oil paint.
- Cover for 3 minutes.
- Stir. ≈ 4 min
- Add the tail pieces. ≈ 3 min
- Cover again for 3 minutes.
- Transfer the cooked shrimp to a large bowl. ≈ 3 min
- Pour in the cold water and cover. ≈ 3 min
- First, cook over high heat.
- Once it comes to a boil, stir and reduce the heat.
- Cover again until the tail is tender. ≈ 3 min
- Stir occasionally to prevent the meat from sticking to the bottom of the pan. ≈ 4 min
- When the tail is tender, add the peanut sauce mixture. ≈ 3 min
- Extract the color from the beetroot and add it to the warm water, mix well, and pour into the saucepan. ≈ 4 min
- Bring to a boil, then add the flat beans, winged beans, long beans, and the heart of a banana plant.
- Stir and cover for 5 minutes.
- Add the peanut butter, stir, then add the green beans and eggplant. Cover. ≈ 4 min
- After 3 minutes, add the cabbage, pak choi, and salt. Stir.
- Reduce the heat to medium and let it simmer for 3 minutes.
- Serve hot with fermented shrimp paste or slow-cooked pork with shrimp paste.
