Directions
- Thoroughly wash the sauerkraut under several waters to remove excess salt. It is also advisable to blanch it in boiling water for a few minutes after the first rinse, then rinse and drain it.
- Melt the finely chopped onion in the bacon (or pierce the whole onion with cloves to allow them to slide into the center of the sauerkraut).
- In a large pot, arrange a generous layer of sauerkraut with the juniper berries, garlic, and onion, then add the meats (except the knacks), and cover with another layer of sauerkraut. ≈ 3 min
- Soak generously with half dry white wine and half water (or blonde beer and water), and season to taste. ≈ 2 min
- Bring to a boil, then simmer for 1 hour 30 minutes over low to medium heat (45 minutes to 1 hour in a pressure cooker).
- Steam the apples and poach the dumplings for 10 minutes.
- Serve the sauerkraut with the meats, dumplings, and root vegetables. ≈ 2 min
