Directions
- Prepare the turkey according to the instructions on the packaging. ≈ 3 min
- Remove the offal bag. Brown the offal in a little butter, cover with cold water, and let it steep for 1 to 2 hours to create a base for the sauce.
- If you wish, stuff the turkey, and then close the opening with toothpicks and kitchen string, similar to tying it up. ≈ 10 min
- Mix the pestle and mortar together. The filling can also be cooked separately in a covered aluminum dish for the last hour.
- Rub the turkey with melted butter, then salt and pepper it. Roast in the oven at 160 °C (325 °F), for 30 minutes per kilo (2.2 pounds), plus an additional 30 minutes if it is stuffed.
- After 30 minutes of cooking, pour the hot water mixed with chicken broth into the roasting pan, and add more if needed.
- Moisten the turkey several times during cooking. ≈ 3 min
- For the sauce, combine all the ingredients in a small saucepan and bring to a boil. Reduce over high heat until the sauce has thickened to a gravy consistency, about 15 minutes. Strain.
- Brush the turkey with this sauce during the last 30 minutes of cooking. ≈ 4 min
