Sweet and sour grouper, a Filipino dish
A whole fried sea bass, covered in a sweet and sour sauce with crunchy vegetables (carrot, onion, tomato, and ginger), finished with sesame oil.
This whole fried fish is served with a vibrant sweet and sour sauce, topped with carrots, onions, tomatoes, and ginger. A few drops of sesame oil added at the end of cooking enhance the flavor. A festive and impressive dish.

Directions
- Clean the fish, then make a cut on its back. ≈ 8 min
- Rub it with garlic, chili pepper, and salt. ≈ 3 min
- Heat the oil in a pan and fry the fish in it.
- Once the fish starts to turn golden, remove it from the pan and let it drain until the oil has completely absorbed.
- In another pan, heat 1 tablespoon of oil paint.
- Add the carrot. ≈ 3 min
- Stir well, then add the red chili pepper, onion, tomato, garlic, and ginger. ≈ 4 min
- Stir and cook for another 15 seconds, then pour in the sweet and sour sauce.
- Once the sauce comes to a boil, turn off the heat and stir in the sesame oil. ≈ 4 min
- Coat the fish with the sauce. ≈ 3 min
