Directions
- Place the four fish (often with the heads cut off behind the fins and tails) in just enough salted water to cover them, along with the whole onion.
- Remove the fish from the pot and carefully remove the bones. Add the diced carrots and chopped celery to the broth, and cook until tender.
- Add some chopped parsley and chives, thyme, tarragon, bay leaf, pepper, and paprika, and let it simmer for about 10 minutes. ≈ 3 min
- Add the hot pepper and grated tomatoes. If desired, dilute the tarama with a little broth and add it, along with the shrimp tails and fish flesh.
- Add the remaining parsley and fennel. Once boiling, remove from heat and let cool: it is best served warm. It is just as good as bouillabaisse.
