Directions
- Using kitchen scissors, draw a line all the way around the shell, about a quarter or fifth of the way up from the bottom. ≈ 3 min
- Gently crack the top of the egg and separate the yolk and white. For a richer flavor, use only the yolks from one or two eggs. ≈ 8 min
- Carefully cut the dome along the marked line. ≈ 8 min
- Remove the air pocket and the adhesive membrane inside, as completely as possible: this is a time-consuming and delicate process.
- Beat the eggs in, adding the cream. ≈ 4 min
- Add the sugar, salt, and milk while continuing to mix. ≈ 4 min
- Add the vanilla and mix well (if using a pod, cut it, let it infuse, then strain).
- Fill the shells halfway, to avoid spills; pour the excess into small bowls. ≈ 10 min
- Place the shells in an egg carton or aluminum rack, arrange them on a plate in the steamer, and cook for 4 minutes over high heat (6 minutes for larger ramekins).
- Once the flan is baked, it’s ready to be enjoyed. ≈ 3 min
