Directions
- Wash the peas thoroughly until the water runs clear. ≈ 2 min
- Place them with the water and meat (except the sausage) on the fire. ≈ 3 min
- Bring to a boil, and occasionally skim off any foam that forms on the surface.
- Let the soup simmer for 45 minutes.
- If you have used a large piece of meat, remove it from the soup and cut it into smaller pieces. ≈ 8 min
- You may optionally remove the bone. ≈ 3 min
- Return the chopped meat to the pot. ≈ 3 min
- Roughly chop all the vegetables. ≈ 8 min
- Add them to the pot and let them simmer until they are very tender, or at least for another 30 minutes.
- Taste the soup after 15 minutes, and add salt and pepper to your liking.
- Five minutes before the end of cooking, add the entire sausage, cut into slices. ≈ 3 min
