Directions
- Preheat the oven to 180 °C (350 °F) with a fan.
- Separate the egg whites from the yolks. Whisk the yolks and sugar until the mixture becomes frothy. ≈ 4 min
- Add the almond flour, flour, baking powder, cinnamon, ginger, nutmeg, pre-mixed spice blend, and salt. ≈ 3 min
- Incorporate the grated carrots: the dough is quite firm, so don’t hesitate to mix it vigorously. ≈ 4 min
- Whip the egg whites to stiff peaks and gradually fold them into the mixture, starting with a small amount to lighten the batter, then gently incorporating the remaining whites. ≈ 10 min
- Pour this into a well-greased loaf pan and bake for 40 to 50 minutes. Let it cool on a wire rack.
- For the glaze, combine the cream cheese, powdered sugar, and a few drops of lemon juice. Spread it over the cold cake and decorate with chopped walnuts and lemon zest. ≈ 4 min
