Directions
- Wash the figs, make a small cross on the opposite side of the stem, just barely into the skin, then rinse them. ≈ 2 min
- Place them in a saucepan or copper pot, and bring to a boil once.
- Rinse them in a colander and dry them. ≈ 2 min
- Freeze them overnight, placing them in separate plastic bags or aluminum containers so they don’t touch each other.
- The next day, remove the stems, rinse them under water, and peel them off one by one with your fingers. ≈ 3 min
- Place them in a large saucepan, still frozen, without the skin. Cover with water and bring to a boil three times, replacing the water each time, but not for too long.
- Place the figs in the saucepan with half of the sugar, alternating layers of figs and sugar. Cook for 1 hour or more, until they are soft and have a sweet taste.
- Reduce the heat, add the cloves and cinnamon to taste, then simmer until the figs become translucent.
- Remove from the heat and pour into a container to cool.
- Prepare a slightly thick syrup using the remaining sugar. ≈ 3 min
- Pour this syrup over the figs. ≈ 3 min
- Store in the refrigerator or freezer.
