Directions
- Roll out the dough on a surface, but don’t make it too thin. ≈ 4 min
- Cut the sheet into rectangles approximately 60 cm long and 20 cm wide. Place each rectangle on the guitar strings, lengthwise, and press with the roller: the dough passes between the strings and is cut into square spaghetti. ≈ 8 min
- Prepare the ragù using the tomatoes, meats, butter, oil, whole onion, and carrot. Allow at least one hour of cooking time. ≈ 3 min
- In a large saucepan, bring a large amount of heavily salted water to a boil. Once boiling, add the spaghetti and wait until they float to the surface, which takes only a few minutes.
- Stop cooking when the water is very cold. Season immediately and serve hot, with Parmesan cheese if desired. ≈ 2 min
