Directions
- Place the duck breast in the soy sauce and let it marinate for at least 2 hours, ideally overnight. Keep the marinade.
- Cook the apples or pasta. Juice the oranges. Wash the frisée lettuce and prepare a vinaigrette with vinegar, a little water, mustard, salt, pepper, and oil.
- Season the duck breast and place it skin-side down in a hot, lightly oiled frying pan. Cook until the meat begins to turn pale around the edges.
- Turn it over and continue to cook over medium heat, then cover it with aluminum foil. ≈ 3 min
- Sauté the chopped onion in the cooking fat, deglaze with the soy sauce and orange juice marinade, and let it reduce into a sauce.
- Slice the duck breast and serve it with a sauce, along with orange segments, salad, and the accompanying dish. ≈ 8 min
