Directions
- Grease and then flour the baking pan. ≈ 3 min
- Preheat the oven to 180 °C (160 °C with a fan).
- Melt the butter in a medium-sized saucepan.
- Pour the sugar into a large mixing bowl, add the egg whites and yolks, and mix everything together. ≈ 4 min
- Add the melted butter and mix again. ≈ 4 min
- Incorporate the flour gradually while mixing, along with the cocoa or vanilla if you are making a variation. For a walnut cake, gently fold in the walnuts: the batter should remain light and airy. ≈ 4 min
- Pour the batter into the mold, filling it about three-quarters full. ≈ 3 min
- Bake for 30 to 60 minutes at 180 °C.
- First, check the color: when it is nicely golden, open the oven and insert a knitting needle into the cake. If the needle comes out dry, the cake is done; if the batter sticks to it, continue baking.
