Shrimp with onions in a sherry sauce
A dish from Qeshm, in southern Iran: shrimp cooked gently with a lot of onion, tomato paste, and spices, served with rice.
This specialty of the Qeshm Island and the Bouchehr region combines shrimp and sweet onions. The onion juice infuses the shrimp during a gentle, covered cooking process.

Directions
- Peel the onions and finely chop them. Clean the shrimp. ≈ 8 min
- Add them to the pot with the onions over low heat. Cover the pot and reduce the heat so that the onion juice seeps into the shrimp. ≈ 3 min
- Add a little oil paint to the pot and bring the shrimp back in. Then add the spices and bring it back to a simmer.
- Add the salt, pepper, and tomato paste, then return to the pot.
- Reduce the heat and let it cook for a few minutes. Then, transfer to a serving dish and serve.
- Some also add fried apples, garlic, and peppers. This dish doesn’t necessarily need to be served with rice, as it’s not a stew, but a stir-fry; however, it pairs very well with rice.
