Pork shanks with chickpeas and sausage
Boiled and shredded pig’s trotters, simmered with sausage, ham, paprika, green chili peppers, and chickpeas in a thick tomato sauce.
In this Filipino dish, the pig’s shin is first boiled in salted water, then deboned and simmered with sausages, ham, paprika, chickpeas, and tomatoes. The sauce gradually thickens to the desired consistency.

Directions
- Clean the shrimp and boil them in salted water.
- When it’s tender, separate the meat from the bone. ≈ 2 min
- Bring back the familiar flavors of garlic, onions, tomatoes, and sausages, recreated in warm oil paint.
- Add the paprika, green chili peppers, bay leaf, and beef shin. ≈ 3 min
- Add the meat and chickpeas. ≈ 3 min
- Continue cooking until the sauce thickens to your desired consistency.
- Season with salt and pepper. ≈ 2 min
