Shepherd’s pie with carrot mash
Hachis parmentier: ground meat cooked with onions, garlic and tomatoes, topped with a carrot and potato mash, then browned.
A hachis parmentier, the French cousin of shepherd’s pie, served on the plate with its orange mash and ground meat: the dish of August 31.
The meat cooks with the onions, garlic, tomatoes, a little flour and herbes de Provence, then is bound off the heat with an egg yolk and Parmesan. It’s then topped with mash, sprinkled with grated cheese and browned.
The orange carrot and potato mash recalls Axelle’s baked mash from August 3.
