Directions
- Mix the gluten powder, salt, and flour together, add water and soy sauce, and knead until a smooth and elastic dough is formed. ≈ 10 min
- Wrap the mass in muslin. ≈ 3 min
- Heat a large amount of water, along with the vegetable stock.
- Soak the seitan in a large pot of broth and simmer for 30 minutes.
- Drain and reserve. ≈ 2 min
- Peel the chestnuts. ≈ 3 min
- Cook them for 5 to 10 minutes after the seitan has been cooked in boiling water.

- In a wok, melt the margarine and add the onion and peppercorns.
- Add the whole carrots, the leek whites, and the celery. ≈ 3 min
- Let it cook for a few moments.
- Then, add the seitan, chestnuts, herb mix, and mustard. ≈ 3 min
- Pour the vegetable stock mixed with water over the vegetables, until they are covered.
- Adjust the seasoning by adding ≈ 2 min
