Directions
- In a mixing bowl, combine the flour, salt, and cumin, then knead with the oil and soy milk until a smooth, glossy dough forms. Let it rest for an hour.
- Sauté the onions, tomatoes, and chili pepper in a small amount of olive oil until they are softened and slightly browned.
- Rehydrate the textured soy, squeeze it well, and add it. Cook for about 15 minutes over low heat, season with salt and pepper, and let it cool before incorporating the malted yeast.
- Spread the dough out into a long rectangle and cut it into triangles. ≈ 8 min
- Place a ball of pastry dough at the base of each triangle and roll them into crescent shapes. Then, place them on a baking sheet lined with parchment paper. ≈ 3 min
- Preheat the oven to 200 °C. Grease the croissants and bake for 15 minutes, then brown them for a few minutes under the broiler, keeping a close watch.
- Serve warm or cold, for example, alongside a vegetable medley. ≈ 2 min
