Thai-style sautéed squid with salted egg yolks
A quick Thai stir-fry: blanched squid stir-fried with garlic, oyster sauce, chili paste, and crushed, salted egg yolks, served with rice.
The salted cane sugar gives this Thai stir-fry a golden, rich, and slightly grainy sauce. The squid, which are only lightly blanched, remain tender; the whole dish can be prepared in just a few minutes.
