This Catalan dish requires a bit of preparation: the herring needs to be desalinated for several hours, then chilled before being served with capers and parsley.

Directions

  1. Clean the herring, remove the bones, and let them soak for about 4 to 5 hours.
  2. Wipe them clean with a dishcloth and cut them into strips that you roll up. ≈ 10 min
  3. Arrange the herring fillets on a serving dish, sprinkle with capers and a generous amount of freshly chopped parsley. ≈ 2 min
  4. Drizzle with oil paint and decorate the platter of pepper strips. ≈ 2 min
  5. Let it rest for 2 hours before serving.
