Directions
- Preheat the oven to 200 °C.
- Melt the butter in a saucepan, add the thinly sliced leeks and cook for 2-3 minutes. Then add the finely chopped Allium ascalonicum and continue cooking for 3-4 minutes. Pour in the beer and broth, season with salt and pepper, and cook uncovered until one-third of the liquid has evaporated.
- Place the fish fillets in the pot and cover them with tomato slices. Season and bake for about 10 minutes.
- Place the fish on the plates, add a dollop of butter to the sauce, and adjust the seasoning as needed. Drizzle the sauce over the fish and serve. ≈ 2 min
