This dish, of Chinese origin and very popular in Malaysia, combines three elements: chicken poached in a fragrant broth, rice cooked in the same broth, and a sauce spiced with chili peppers. The broth is also used as a soup.

Directions

  1. Place the chicken in a pot and cover it with water. ≈ 3 min
  2. Add the garlic and ginger, then the salt and bouillon cube.
  3. Cook the chicken for about 30 minutes, or until it is cooked through.
  4. Remove the chicken and set it aside. ≈ 3 min
  5. Divide the broth in half: one half for the soup, and the other for the rice.
  6. When ready to serve, cut the chicken into pieces, drizzle with a little light soy sauce and a touch of sesame oil, and garnish with celery leaves. ≈ 8 min
  7. Combine all the sauce ingredients (B) and cook until the sauce thickens.
  8. Heat the oil, then add the garlic and ginger.
  9. Once they are sufficiently golden, pour half of the mixture into the rice pot; the other half will be used for the soup. ≈ 2 min
  10. Add half of the chicken broth, then cook the rice as usual, adding a little sesame oil.
  11. In a separate saucepan, bring the soup to a boil and add the remaining half of the garlic and ginger mixture.
  12. Finally, add the celery leaves and turn off the heat. ≈ 3 min
  13. Serve with a side of lettuce, cucumber, and tomato slices. ≈ 2 min
