Directions
- soy sauce, sugar, spice blend, 2 crushed garlic cloves, a pinch of salt. ≈ 4 min
- Mix thoroughly in a bowl. ≈ 4 min
- Make a few shallow cuts in the chicken thighs, then use a fork or the tip of a knife to lightly score the skin, which will help the spices penetrate. ≈ 8 min
- Mix the spices with the chicken, and let it marinate for about 30 minutes, or even overnight.
- While marinating, turn the chicken occasionally to ensure that the spices penetrate both sides evenly.
- Rinse the raw rice to remove any excess water. ≈ 2 min
- In a pan, pour in olive oil and warm oil paint.
- Dice half of the onion until it is golden brown.
- Add the rice and brown to the pan over high heat, allowing them to absorb the oil. ≈ 3 min
- Transfer the rice to a baking dish. ≈ 3 min
- In another pan, heat up some oil paint.
- Add the remaining half of the onion and cook until golden brown. ≈ 3 min
- Add the chicken thighs, starting with the skin-side down, and cook until the skin is crispy and golden brown.
- Flip the thighs and cook them briefly on the other side.
- Arrange the chicken drumsticks on a griddle, on top of the cooked rice. ≈ 3 min
- Pour in the chicken broth and milk.
- Cover the dish with a sheet of aluminum foil. ≈ 3 min
- Bake in an oven preheated to 175-180 °C (or 160 °C with ventilation) for approximately 50-55 minutes, until the rice is cooked and the chicken is tender.
- It is important to measure the amount of chicken broth and milk.
- The amount can vary from one cup of broth to half a cup of milk, depending on the amount of rice you are using.
- Start with 1 cup of broth and 1/2 cup of milk.
- If the rice starts to dry out, add another 1/2 cup of milk. ≈ 3 min
- If the rice is still a little moist, cook for another 5 to 10 minutes to ensure it is fully cooked.
- Before serving, sprinkle with fresh basil. ≈ 2 min
