Rice sausage croquettes in tempura
Black pudding and rice balls coated in tempura, perfectly golden-fried, and served with a piquillo pepper cream sauce, ideal as pintxos.
These Basque croquettes transform the rice and meat mixture into crispy meatballs. A pepper piquillo cream accompanies them, either as pintxos or as an appetizer.

Directions
- First, prepare the pepper cream: chop the onion and sauté it in a pan. After about 10 minutes, add the peppers and cook for another 5 minutes. Pour in the cream, reduce the heat, and simmer for about 15 minutes. Set aside.
- Remove the skin from the sausage with a knife. With the meat, form small meatballs by hand. Set aside. ≈ 10 min
- Whisk the prepared pepper cream. In a bowl, add a few tablespoons of tempura flour and gradually add cold water, whisking constantly until a batter forms that is not too thin, following the instructions on the package. ≈ 4 min
- Heat vegetable oil in a pot. Dip the balls in the tempura batter, then immerse them in the hot oil. They will first puff up, then turn golden brown. Drain them on paper towels.
- Arrange the meatballs on a plate with the pepper cream sauce alongside. This recipe is perfect for making pintxos. ≈ 2 min
