Mushroom pâté with sheep’s milk cheese
A rich and creamy mushroom, caramelized onion, and sheep’s milk cheese pâté, mixed with bread soaked in milk, served on toast.
This Basque pâté is made in a blender with sautéed mushrooms, caramelized onions, soaked bread, and sheep’s milk cheese. It is stored in the refrigerator in small jars and spread on toasted bread.

Directions
- Soak the toasted bread in the milk.
- Heat the oil in a pan over medium heat. Then, add the onions and cook until softened.
- Add the mushrooms to the rest of the oil paint.
- In a mixing bowl, combine the softened bread, onions, mushrooms, soy sauce, cheese, pepper, and salt. ≈ 3 min
- Combine all the ingredients into a thick dough. ≈ 4 min
- Taste and adjust the seasoning. ≈ 2 min
- Store in the refrigerator in small, sealed glass jars.
