Bakhsh: Slow-cooked rice with meat and parsley
A dish of rice cooked with ground meat, cumin, a splash of soy sauce, and a generous amount of fresh parsley, simmered slowly over several stages.
Bakhsh is a complete dish consisting of rice and meat, seasoned with cumin and enhanced with a touch of soy sauce. A generous amount of fresh parsley gives it its distinctive flavor. It is prepared in a large cast-iron pot, in several stages of cooking.

Directions
- Pour into the saucepan the oil paint. ≈ 3 min
- Cut the meat into very small pieces and cook it with the onion, stirring constantly. Cook for 10 minutes.
- Add the salt, cumin, pepper, and soy sauce. Cover and let simmer for 5 minutes.
- Pour the water into a pot and bring to a boil. Once boiling, remove any foam that forms and reduce the heat to low. Cover and simmer for one hour.
- While you’re doing that, wash and clean the rice. Wash and finely chop the parsley. ≈ 8 min
- Add the parsley to the pot with a pinch of salt, and if needed, a little water. High heat, for 15 minutes.
- Add the rice and stir. High heat, for 10 minutes.
- Stir well with a large spoon to ensure the rice is evenly distributed. ≈ 4 min
- Form a mound of the rice, using low heat, and let it cook for another 10 to 15 minutes.
- It is best to transfer the mixture to another saucepan for serving. ≈ 2 min
