Directions
- First, thoroughly clean the grains by removing any rice pulp or hard bits that are attached to them. ≈ 8 min
- In a large pot over the heat, combine sugar and water.
- When the sugar melts and forms a thick, sticky substance (which resembles a string when held in your hand), turn off the heat. ≈ 3 min
- Next, gradually add the clean, pre-cleaned dust to the boiling syrup, and mix vigorously with a spatula to ensure the dust is thoroughly coated in sugar.
- Once the mixture has reached a comfortable temperature, apply a small amount to the palm of your hand. ≈ 3 min
- Take a portion of the dough and, using both hands, form it into a round ball by pressing it firmly. ≈ 10 min
- (It is important to complete this step immediately after preparing the dough, as otherwise it may harden and become difficult to work with). ≈ 3 min
