Risotto with peas and chickpeas is a specialty of Venetian and island cuisine. It is a very creamy risotto, made with green peas and onions. It provides carbohydrates, plant-based protein, and fiber. Consuming rice and legumes together provides the nine essential amino acids the body needs.

Directions
- Prepare some water or hot broth nearby, so that you can easily add it if needed, without interrupting the cooking process.
- Add the finely chopped white onion to a pan with two tablespoons of extra virgin olive oil and sauté for a few minutes.
- Then, the peas are added and cooked over medium heat, uncovered.
- Mash the cooked green beans in a pot, so that at least a third of them are mashed. ≈ 4 min
- Then, the rice is added and cooked quickly. ≈ 3 min
- Once the rice is cooked, add the hot broth, in sufficient quantity to cover it, along with a generous pinch of sea salt.
- The mixture is stirred and left to cook over low heat, but with careful attention to ensure that it doesn’t boil over.
- Every two minutes, the mixture is stirred, the liquid level is checked, and hot water is added. ≈ 3 min
- The final result (rice cooked according to the instructions on the packaging) should have a creamier texture than traditional risotto. ≈ 3 min
