Directions
- Wash, peel, and chop the rhubarb into small pieces, about half the width of a thumb. ≈ 8 min
- Place the rhubarb in a pot and heat over medium heat.
- Whisk the eggs with a third of the sugar to create a caramelised mixture.
- Once the rhubarb is cooked, add 2/3 of the remaining sugar and the vanilla sugar, stir for a few moments, and remove from the heat. ≈ 4 min
- Wait for about 1 minute, then gently fold in the beaten eggs.
- Place the pot back on the stove and let it simmer again, stirring constantly.
- Pour une utilisation facile, pour transfer the mixture to a mold and let it cool at room temperature before refrigerating.
- The cream whips up nicely. Reserve about 3/4 of the cream and add it just before serving, using the remaining portion for decoration. ≈ 2 min
