Directions
- Wash the red kuri squash, cut it in half, remove the seeds, and slice it thinly. ≈ 8 min
- Finely chop the onion and sauté it in the 20g of butter. ≈ 8 min
- Add the red kuri squash. ≈ 3 min
- Cook over low heat, adding a little broth and stirring. Season with salt if desired.
- Once the red kuri squash is fully cooked, add the rice and cook for about 20 minutes, adding the hot broth gradually. Stir frequently: the rice should absorb the broth with each addition.
- Pour in the milk and continue to cook over high heat. ≈ 3 min
- Add the Parmesan and parsley, and season with pepper if desired. ≈ 2 min
