Directions
- Wash and chop the zucchini. ≈ 8 min
- In a bowl, combine the chopped walnuts, sugar, and vanilla. ≈ 4 min
- Mix well, and add a little lemon zest. ≈ 4 min
- Cook until the mixture thickens, then continue cooking for another 10 minutes.
- I recommend stirring constantly. ≈ 4 min
- Next, add the honey, mixed with 2 to 3 tablespoons of sugar (for this amount, I use about 2/3 of the honey portion). ≈ 3 min
- Thoroughly mix the honey, and continue to cook, stirring constantly, for another 3 to 5 minutes.
- Then, completely extinguish the flame, add the lavender flowers, and mix well. ≈ 4 min
- Continue to cook for about 1 minute (on very low heat; it should not boil, it is important that the lavender is well incorporated).
- The jam is ready; pour it into clean jars that have been pre-heated. ≈ 3 min
- Make sure they are properly closed, turn them over, and leave them like that for 10 minutes.
- Place them with the right sides facing up and let them cool.
