Directions
- First, prepare the toasted rice: heat a pan over high heat and toast the raw rice until it is golden brown and almost burnt, then grind it slightly with a mortar and pestle.
- Heat the broth in a medium-sized pot, add the ground chicken, and let it simmer.
- Add lemon juice, fish sauce, chili pepper, grilled rice, Allium ascalonicum (garlic), green onions, cilantro, and mint.
- Mix well, then adjust the amount of lemon, fish sauce, or chili pepper to your liking. ≈ 4 min
- Serve the salad with lettuce, cabbage, or green beans. ≈ 2 min
