Directions
- Peel the quinces, and cut them into four pieces. ≈ 8 min
- Protect the environment with the seeds, and wrap them in a square of muslin. ≈ 3 min
- Place the quince in a bowl of cold water, along with the bag of seeds.
- When the quince are properly cooked, drain them, weigh the cooking liquid, and add it back to the pot along with the same weight of granulated sugar and a zest of lemon or orange.
- Rinse your mouth out frequently. ≈ 3 min
- Stop cooking when the mixture reaches the “pearl” stage. ≈ 3 min
- Put them in containers. ≈ 3 min
- Wait until the jelly is completely chilled before closing the jars. ≈ 3 min
