Directions
- Wash, peel, and cut the potatoes into halves, then boil them in salted water for about 40 minutes. Finally, press the cooked potatoes through a potato masher.
- Let them cool slightly, then mash them into a smooth consistency, adding flour and salt to the mixture.
- In a pot, pour in warm water. ≈ 3 min
- Gradually add water while kneading the dough by hand for about 10 minutes, until you obtain a soft dough that is not too dry.
- Let the dough rest for about 1 hour.
- Starting with the dough, form 18 to 26 balls (about the size of a golf ball). ≈ 10 min
- Using a rolling pin, on a lightly floured surface, shape the dough into small, coaster-shaped pieces. ≈ 10 min
- Heat the fat in the pan.
- Dip each piece individually in fat, turning it regularly, to achieve a golden color.
- During cooking, regularly brush each pancake with fat. ≈ 4 min
- The Alu Puri should inflate like a balloon. ≈ 3 min
- Allow the puri to dry very briefly on absorbent paper. ≈ 3 min
- Serve immediately. ≈ 2 min
