Directions
- If the sardines are salty, soak them overnight in fresh water, changing the water 3 or 4 times, then drain and dry them. ≈ 2 min
- Peel the apples and cut them into slices about the thickness of a finger. Grate the tomatoes, mince the garlic (not too finely), and chop the parsley. ≈ 8 min
- Place the apples in the bottom of the dish, and season them with salt to your liking. ≈ 2 min
- Cover half of the grated tomato, then half of the minced garlic, parsley, and pine nuts. ≈ 3 min
- Place the bonito fillets skin-side down, with the bay leaves around them. Cover with the remaining tomato, add water and a generous drizzle of oil, and sprinkle with the remaining garlic, parsley, and pine nuts. ≈ 2 min
- Bake in the oven at 250 °C (482 °F), with the lid on, then reduce the temperature to 180 °C (356 °F) as soon as the liquid starts to boil. Allow to cook for 30 to 40 minutes: the dish is ready when the apples are tender.
