Bánh da lợn is a traditional dessert from southern Vietnam. It consists of a colorful and fragrant dough, served warm. The recipe is simple and requires minimal preparation time.

Directions

  1. Cut the pandan leaves into small pieces and blend with 1 tablespoon of water. Strain the mixture through a sieve, reserving the liquid. ≈ 8 min
  2. White mixture: 1 tablespoon of flour, 1 tablespoon of sugar, 1 1/4 tablespoons of coconut milk and vanilla. ≈ 3 min
  3. Green mixture: 1 tablespoon of flour, 1 tablespoon of sugar, 1 tablespoon of pandan leaf liquid, 1/3 tablespoon of cold water, and a pinch of baking soda. ≈ 3 min
  4. Use non-stick molds to prevent the release of grease. Boil water in a saucepan, then pour the white mixture into the molds and bake until almost cooked, then pour the green mixture on top.
  5. For the rice flour dough roll: 1/2 cup of dried green beans, cooked and mashed with 1/2 cup of sugar. ≈ 3 min
  6. Keep the warm Bánh da lợn and serve. ≈ 2 min

Ingredients

  • 1 packet of maize flour (14 oz, divided into 2 parts, approximately 2 tablespoons, 1 tablespoon for the white, 1 tablespoon for the green)
  • 2 tablespoons of sugar
  • 6 pandan leaves
  • A few drops of green food coloring
  • 1 can of coconut milk (13.5 oz/container)
  • 1/6 teaspoon of vanilla
  • 1/6 teaspoon of baking soda (to add a small amount of baking soda to the green mixture to prevent the dye from spreading)
