- Peel and finely chop a small clove of garlic along with some chives. Add these herbs to a bowl and pour in the three tablespoons of olive oil, along with the Espelette pepper, and mix well. ≈ 8 min
- Dip each longan individually in this mixture of herbs and oil paint. Place them in an oven-safe dish, which has been well-oiled. ≈ 3 min
- Cook the mussels for 20 minutes before serving, until they are cooked and have released any liquid.
