Directions

  1. Cut the pork into bite-sized pieces and marinate it with light soy sauce, a little oyster sauce, pepper, one egg, and a small amount of sugar.
  2. Carefully separate the noodles. Soak the kale and carrot in salted water for 15 minutes, drain, and chop the kale.
  3. Heat the oil in a wok over medium-high heat and stir-fry the garlic and pork.
  4. When the pork is almost cooked, increase the heat, add the kale and carrot, and stir-fry until tender. Then, push everything to one side of the pan.
  5. Add a little oil, crack the other egg, and lightly whisk it. ≈ 3 min
  6. Add the noodles, black soy sauce, nuoc-mâm, the remaining sugar and oyster sauce, and stir-fry, pressing the noodles against the wok to slightly caramelize them.
  7. Bring the meat and vegetables to the grill, and mix until it starts to smell slightly smoky. Then, turn off the heat.
  8. Serve with pepper. ≈ 2 min
