Directions
- Cut one half of the pineapple into small pieces and juice the other half using a juicer to extract the juice. ≈ 8 min
- Separate the grapefruit segments by sliding the knife between the membranes and collecting the juice, then cut them into small pieces. ≈ 8 min
- Dice the medium-sized onions. ≈ 8 min
- Cut the green onions in half, keeping a portion of the stem, and then submerge them in ice water. ≈ 8 min
- Heat the oil in a saucepan and add the onions, cooking over medium heat for 5 minutes.
- Add the rice and mix well to coat it evenly with the oil, then sprinkle with curry powder and stir. Finally, add the pineapple juice and grapefruit juice, and season with salt. ≈ 4 min
- Continue to cook over low heat for 17 to 20 minutes, adding more water as the rice absorbs the liquid.
- Towards the end of cooking, add the coconut, diced pineapple, segments of grapefruit, and the drained green onions, then mix well. ≈ 4 min
