Estopado is a Filipino pork dish, slow-cooked in a sauce made of caramelized sugar and vinegar. The addition of banana saba and garlic makes it particularly flavorful.

Directions

  1. Fry the meat. The leftover fried meat can also be used in this dish.
  2. Caramelize the sugar in a pot with a small amount of vinegar.
  3. When the caramelized sugar releases its aroma, pour in the remaining vinegar and water, then mix well: this will be the cooking liquid. ≈ 4 min
  4. Prepare a pot by lining the bottom with parchment paper to prevent the mixture from sticking. ≈ 3 min
  5. Place all the ingredients in the pot, including the caramel sauce. ≈ 3 min
  6. Cover tightly with wilted banana leaves to prevent steam from escaping.
  7. After boiling, reduce the heat and let it simmer gently until the meat is tender.

  • 250 ml of vinegar
  • 200 grams of sugar
  • 1 onion
  • 3 heads of Allium sativum (garlic)
  • 2 Saba bananas
  • 1 small glass of gin (approximately 30 ml)
  • Wilted banana leaves
