This jam allows you to use peaches from your own tree (even if they aren’t entirely black), and to recycle the peels from freshly squeezed oranges (using only those that haven’t been treated). You can also use whole oranges (without the seeds), if you wish. It is best to choose soft-skinned orange varieties (such as Valencia or Ribera).

Directions

  1. To collect enough pressed orange peels, store them in the refrigerator in cold water with a small amount of baking soda, changing the water each day. This also helps to reduce their bitterness.
  2. Wash the fruits thoroughly with a brush, peel the persimmons, and remove the seeds. ≈ 8 min
  3. Finely chop the peels in a food processor, in batches. If the persimmons are not fully ripe, blend them. For a firmer jam, add diced apples. ≈ 8 min
  4. Add the lemon juice and the clove (or cinnamon). ≈ 3 min
  5. Wash and sterilize the jars and their lids. ≈ 2 min
  6. In a large stainless steel saucepan, filled about halfway, cook the fruits and spices over medium-high heat for about 15 minutes after they come to a boil, stirring constantly and adding the sugar gradually.
