This pear jam is a delight for the taste buds. It is made simply by mixing pears, liquor, and sugar, then letting it rest for several months.

Directions

  1. Wash the pears and cut them into pieces. ≈ 8 min
  2. Chop the pears into small pieces. ≈ 4 min
  3. Allow the pear purée to rest in a cool place for several hours. A layer of liquid should form at the bottom of the container.
  4. Carefully collect the sap and pour it into a small container. ≈ 3 min
  5. Place the container over low heat, add the sugar, and heat while stirring until the sugar is completely dissolved.
  6. Let it cool, add rum, and season with freshly ground grenadier pepper.
  7. Pour this liquid into an airtight container, seal it tightly, and leave it to rest for 3 months.
  8. After this, filter again. ≈ 3 min
