Directions
- Dice the guanciale into pieces about one centimetre in size. ≈ 8 min
- Cook it over low heat in a small amount of oil until it is lightly browned, but not too crispy.
- While that’s happening, whisk the yolks in a large bowl with some of the pecorino and pepper. To create a creamier texture, place the bowl over a saucepan of simmering water for about 30 seconds, continuing to whisk.
- Cook the spaghetti al dente in salted water. Drain them, reserving some of the cooking water, and transfer them to a bowl. Immediately and thoroughly mix with the eggs.
- Add the guanciale and mix again. ≈ 4 min
- Finish with the remaining pecorino cheese and plenty of pepper: its black color evokes the coal that gave the dish its name. Each person can add more to their own plate. ≈ 3 min
