Directions
- Dissolve the yeast in 3 cups of lukewarm milk. ≈ 3 min
- Add 1/2 tablespoon of sugar, salt, egg yolk, and melted butter. ≈ 3 min
- Mix everything together, then add half of the flour, and knead the dough. ≈ 10 min
- Cover the bowl with cling film or a towel, and leave it in a warm place for 1.5 to 2 hours, or until the dough has doubled in volume.
- Heat the remaining milk to 50 °C, then mix it with the batter, along with the remaining flour and sugar.
- Add the well-whisked egg whites. ≈ 3 min
- Mix the dough and let it rest until it has doubled in volume.
- Heat a small frying pan over medium heat, with a small amount of oil.
- Using a large spoon, pour a portion of the dough in the center to form a circle. ≈ 3 min
- Once the bottom of the blini is cooked (the edges of the blini should separate from the pan and point upwards), flip it over.
- Once they are ready, place the blinis on a large plate and begin preparing the next batch. ≈ 3 min
