Directions
- Select live snails with a hard, undamaged shell. ≈ 3 min
- Keep them in a mesh bag for 15 days to allow them to mature. ≈ 3 min
- After this time, remove the dry membrane from the opening with a pin, then cover each snail with salt. ≈ 3 min
- Let them sit for a few minutes to allow any impurities to be released, then wash them thoroughly with cold water. ≈ 2 min
- Heat the oil in a large saucepan.
- When it’s very hot, add the snails and season generously with salt. ≈ 2 min
- Cook over high heat until the liquid has completely evaporated.
- Continue cooking over medium heat for about 20 minutes.
- Garnish with cognac. ≈ 3 min
- Add the bread crumbs. ≈ 3 min
- Mix carefully until the breadcrumbs coat the escargots evenly. ≈ 4 min
- Serve with aïoli or a slightly spicy tomato sauce. ≈ 2 min
